Bulgur wheat, also known as bulghur wheat, burghal or bulgar, is a popular grain in Middle Eastern cuisine. Made from chopped and parboiled wheat, it is very quick to cook, and can be used just like cous cous. Bulgur wheat is often seen as a healthier substitute as it retains fibre during processing and is still classed as 'wholegrain'.
